Quinoa & Veg Rosti's

The great thing about these quinoa rosti’s are that they are really versatile in terms of what veg you add to them so you can mix them up a bit and experiment with all types of different ingredients. Perfect on-the-go food, breakfast in a hurry or summer picnics. Taken from www.ahealthysliceoflife.com

 

Ingredients (Serves 4)

 

2 cups cooked quinoa

1 cup grated carrots

1 cup grated courgette

1 cup grated cheddar (I used strong)

3 eggs

1-2 crushed garlic

pinch of salt & pepper

 

Method

 

1. Start by cooking the quinoa (1 part quinoa:1.5 parts water), bring to boil & simmer for 20 mins, or until water is absorbed.

2. Mix all ingredients together well, divide into 1/4 cup sized piles on baking paper lined trays.

3. Bake for 25 mins in 200 degrees centigrade oven.

Enjoy hot or cold!
