Quinoa Salmon Salad

You really don't have to do anything fancy with quinoa, it's lovely as it is and this salad can be whipped up in no time but packs a real nutritional punch as the salmon and chia seeds so rich in Omega 3 oils.


Ingredients (Serves 4)


2 cups cooked quinoa

2 avocado's 

1 cup goats cheese (or you could use cottage cheese or feta)

1 cup cherry tomatoes

2 salmon fillets

1/4 cup Chai Seeds




1.Heat oven to 200 degree's centigrade, line a baking tray with baking parchment paper and lay salmon fillets - cook in oven for approx. 25 mins or until throughly cooked.

2.In the meantime cook the quinoa (1 part quinoa:1.5 parts water) halve the cherry tomatoes and dice the avocado's and cheese.

3.Once quinoa and salmon are cooked, allow to cool and then put the quinoa into a large salad bowl, flake the salmon into the quinoa and add the rest of the ingredients including the chai seeds. Season with salt and pepper.  Serve immediatly or refridgerate til later.
