Quinoa flake and sultana cookies
Ingredients:
170g unsalted butter softened
200g soft brown sugar
120g caster sugar
2 eggs
200g plain flour
½ tsp cinnamon
150g quinoa flakes
100g sultanas

Preheat the oven to 180°C

Cream the butter and both types of sugar together in a mixing bowl

Add the eggs and mix until completely combined

Sift in the flour and cinnamon and mix until combined

Stir in the quinoa flakes and sultanas

Roll the mixture into walnut size balls, place them on a flat baking tray lined with greaseproof paper, make sure you leave plenty of room between each cookie as they will spread

Cook for 18-20 mins and then leave to cool
