These quick and simple energy balls are perfect for anyone who's always on the go, or finds themselves sending a fortune on shop brought snacks. The combination of nuts, dates and puffed quinoa make for a protein packed, sweetly satisfying ball of yumminess, perfectly filling the hunger shape hole that magically appears at 11 and 3. 

 

Makes 8 

 

Ingredients 

  • 25g cashews 

  • 100g dates 

  • 10g puffed quinoa 

 

Method

  • Place the dates and 2tbsp of water in a food processor and blend until a smooth paste is formed  

  • Remove the date paste from the blender and place in a mixing bowl

  • Place the cashews in the food processor and blitz until roughly chopped 

  • Add the chopped nuts and puffed quinoa to the date paste and mix together (The easiest way to do this is to use your hands) 

  • Roll into small balls (I used about 1 heaped tablespoon of mixture per ball) 

  • Place in an airtight container and store in the fridge
