These quick and simple energy balls are perfect for anyone who's always on the go, or finds themselves sending a fortune on shop brought snacks. The combination of nuts, dates and puffed quinoa make for a protein packed, sweetly satisfying ball of yumminess, perfectly filling the hunger shape hole that magically appears at 11 and 3.

Ingredients

25g cashews

100g dates

10g puffed quinoa
Method

Place the dates and 2tbsp of water in a food processor and blend until a smooth paste is formed

Remove the date paste from the blender and place in a mixing bowl

Place the cashews in the food processor and blitz until roughly chopped

Add the chopped nuts and puffed quinoa to the date paste and mix together (The easiest way to do this is to use your hands)

Roll into small balls (I used about 1 heaped tablespoon of mixture per ball)

Place in an airtight container and store in the fridge
