Puffed Quinoa

Puffed quinoa is a versatile ingredient that is well worth the time to make. Perfect atop yogurt or porridge, this little grain adds a nutty crunch to many meals. Not only this but it can be added to granola (see our ‘crunchy quinoa granola’ recipe) for some extra protein in the mornings which will help keep you fuller for longer. 

 

Ingredients 

  • 100g dry quinoa 

  • 180g water 

  • 2 tbsp coconut oil 

 

Method 

  1. boil the quinoa (as per instructions) for 20 minutes 

  2. Once the quinoa is cooked spread on a large baking tray and leave to dry over night

  3. To ‘puff’ the quinoa, heat a small saucepan on a high heat 

  4. Melt a small (about 1/6 tsp) of coconut oil in the pan

  5. Add a tablespoon of quinoa to to the pan and allow to pop, it should puff in a similar way to popcorn 

  6. Once all the quinoa in the pan is puffed, empty into an airtight container 

  7. Repeat steps 4-6 until all the dried quinoa is popped
