Ham & Cheese Quinoa Cups

 

I tried these out tonight, they were pointed out to me by my neighbour 'Bath Harvest Oils' the recipe is taken from www.iowagirleats.com. These went down a storm, I personally feel you can never go too far wrong with ham and cheese! These will be great to prepare for breakfast, picnic or a finger buffet. Delicious hot or cold.

 

Ingredients (serves 4)

 

2 cups cooked quinoa 

2 eggs

2 egg whites

1 cup peas or other green veg ie grated courgette, wilted spinach 

1 cup strong cheddar cheese

1/2 cup diced ham

1/4 cup parsley, chopped

2 Tablespoons parmesan cheese

4 spring onions, sliced

salt & pepper

 

Method

 

  1. Preheat oven to 200 degrees centigrade  Combine all ingredients in a large bowl and mix to combine. Liberally spray a mini muffin tin with non-stick spray and spoon mixture to the top of each cup. Bake for 15-20 minutes, or until the edges of the cups are golden brown. Let cool for at least 5 minutes before removing from the small muffin tin.

  2. For regular-sized muffin tins: Bake for 25-30 minutes.
