Amy's Ginger Cake

 

This recipe was handed to me by my friend Amy, it's her grandmother's recipe which has been slightly modified for the quinoa flour, it really does go very well with a nice cup of tea!

 

Ingredients

 

285g quinoa flour

240ml rapeseed oil 

225 soft brown sugar

2 eggs

2 tablespoons golden syrup

1 tablespoon black treacle

2-3 tablespoons milk

2 teaspoons ground ginger

2 teaspoons mixed spice

teaspoon bicarbonate of soda

 

Method

 

Pre-heat oven to 160c and grease an 8" cake tin.

 

Add oil, sugar, eggs into large bowl and whisk together. Add syrup, treacle, milk, ginger and spice and mix in well.  Sieve the bicarbonate of soda and quinoa flour into the mix and fold in gently until thoroughly mixed.

Pour into cake tin and cook for 30 - 40 minutes until you can poke a knife into the center and it come out clean.

 

Would go nicely with some creme frosting for added indulgence!
