'Best of British' Salad
Named after our lovely stockists on Broad Street, Bath, this is one of the many lovely creations Sarah whips up for her customers using our wholegrain quinoa!
Ingredients: (Serves 4)
1 1/2 cup of cooked quinoa
1 cauliflower broken up into florets
Rapeseed oil
1 pomegranate
1 red onion thinly sliced
1 bunch of mint, leaves picked
1 bunch of parsley, leaves picked
1 lemon juiced
Method
1. Cook quinoa as per packet, (1 part dried quinoa:1.5 water, bring to boil & simmer for 20 mins or until all water absorbed).
2. Mix in cauliflower, pomegranate seeds, red onion, mint and parsley
3. Dress with lemon juice and a good glug of rapeseed oil
4. Season with salt and pepper.
