Banana, blueberry and quinoa pancakes

 

Even though my daughter gasped "oh no, not quinoa again" when I presented her with these pancakes, she devoured the lot!

Very simple to make, if you don't have a blender use ripe banana's that you can easily mash up and whisk well into the mix. If blueberries are out of season (ok I confess these are not British, but they were reduced in my local supermarket so I thought I'd give them a home!) you could replace with dried fruit of choice.

 

Ingredients (serves 4)

 

1 cup (250g) quinoa flour

2 banana's

2 handfuls blueberries (or dried fruit)

2 eggs

1 tsp baking powder

tsp cinnamon

big squeeze of runny honey

100ml milk or dairy alternative

rapeseed oil for cooking

 

Method

 

1. Add all the ingredients apart from the blueberries and oil into a blend and blend until smooth.

2. Heat a small glug of oil into a hot pan and thinly pour mix into two small circles or one large. Scatter blueberries on top.

3. Serve with a drizzle of honey.
